SALMON ROSTIS WITH A HINT OF DILL

Method:
Cook the sweet potatoes for 30 - 40 minutes until they begin to soften. Drain and set aside to cool.
Heat half the olive oil in a small frying pan and add the salmon. Cover with a tight fitting lid and reduce
the heat to very low. Cook for 8 – 10 minutes until the salmon is just cooked. Remove from the heat and
set aside until the salmon is cool enough to handle. Flake the salmon and place in a bowl with the pan
juices.
Grate the cooked sweet potato, add to the bowl with the salmon and toss together to mix. Divide the
mixture into equal quantities and form into flattened patty shapes. Heat the remaining olive oil in a large
non-stick frying pan and cook the rosti over a moderate heat for 3 – 5 minutes on each side until golden
and cooked through.
While the rostis are cooking place the yogurt in a bowl with the spring onions, chives and dill and mix well.
Drain the rosti on kitchen paper, then spoon over the yogurt and serve with fresh lemon wedges.
Tips to Reduce Preparation & Cooking Time
Use a food processor to chop the sweet potato into small pieces instead of grating it to reduce
preparation time.
Use a sachet of salmon instead of using fresh salmon, this will reduce cooking time.
