Method:
Preheat the oven.
Combine the baking powder, bran flakes and whole wheat flour in a mixing bowl.
Mix together the eggs, oil and milk. Stir the dry ingredients into the wet ingredients.
Add the grated carrot and apple to the muffin mixture.
Leave the muffin mixture to stand for an hour or overnight if possible.
Grease muffin trays and place 2 tablespoons of the mixture into each compartment of the muffin pan.
Bake for 20 – 25 minutes, or until cooked through.
Tips to Reduce Preparation & Cooking Time:
Make an extra batch of muffins and freeze them, they can be defrosted and used as a quick snack or
breakfast option.
Prepare the muffin mix ahead of time and keep covered in the fridge for up to 3 days.
When measuring the honey, dip a metal spoon into boiling water first, the honey will then slide easily off
the spoon.
Use a vegetable peeler to peel the carrots and apples.
